Slice halloumi into pieces of even size and thickness
Drizzle with an oil of your choosing with a high smoke point - we've used rapeseed oil.
Coat in a rub or spice mix of your choice, we recommend the peppery rub from spicentice which was delicious.
AT THE BBQ
Set up your Weber BBQ for direct grilling at a medium heat.
Using Weber's non-stick spray give the bbq grates a good coating; this will ensure that you still achieve excellent searing but helps prevent food from sticking the cooking grates and falling apart when flipped.
Add the halloumi slices and close the lid for 1-2 minutes.
Turn over and cooking for a further minutes or do - until cooked to your liking.

This is such a versatile little dish that can be easily adapted for a myriad of meals, here are some ideas:
Slice into strips and serve with a dip.
Serve simply as a side dish at your next backyard BBQ get together.
Roughly chop and work into a salad
Use instead of a burger patty in a bun, great as a vegetarian alternative.
