3. Around The World In 80 BBQs - France

Our next stop on our virtual around the world tour is France; home to a huge range of epic culinary dishes. We've gone for a French classic which makes for a wonderfully indulgent starter for two.

Baked camembert, served with grilled bread for dipping!

We've prepared our baked camembert on the BBQ using gas and in two different ways; both of which are extemely easy and rewarding.

Needless to say that with dishes like this, we'll be coming back to France before this tour is over!

Baked Camembert

INGREDIENTS

Savoury Option:

  • 1-2 cloves of Garlic
    (finely sliced)
  • Fresh thyme
  • 1 small wheel of camembert
  • Olive Oil

Sweet Option

  • Chutney (your favourite)
    We love red onion for this recipe.
  • 1 small wheel of camembert

For dipping:

  • Best Quality French Bread
  • 1-2 Cloves of Garlic

EQUIPMENT

Whilst you can use both a Gas or Charcoal Weber BBQ for this recipe;
We've used the following equipment:

  • Weber Genesis E330
  • Weber Large Roasting Rack & Shield
  • BBQ Skewers
  • Gloves
  • Brie Baker Dishes

IN THE KITCHEN

Savoury:

  • Remove camembert from box and all plastic packaging.
  • Place into a suitable dish like a brie baker.
  • (If you just place the cheese onto a baking tray it will melt into a big puddle and make one hell of a mess on your Weber BBQ!)
  • Lightly score the camembert using a sharp knife and stud with finely sliced garlic and thyme sprigs; drizzle with olive oil. This also works very well with rosemary.

Sweet:

  • As before, remove camembert from box/plastic packaging and place into a suitable dish.
  • Using a sharp knife, remove the top layer of rind (flattest).
  • Slather on a generous coating of Chutney; this will intermingle with the gooey cheese during the cooking process.
  • Also works well with Honey!

Bread:

  • Crusty French bread pairs beautifully for dipping with your melted cheese;
  • slice inch thick and rub both sides with fresh garlic; drizzle with Olive Oil.
  • Or why not cube your bread and grill on kebab skewers? It looks great!

AT THE BBQ

  • Preheat your BBQ to approx. 200c (we're using the Weber Genesis E330).
  • Set up for indirect cooking (click here to find out how and for more BBQ techniques).
  • Use an upside grill tray to elevate the dish from the cooking grates; Cast Iron cooking grates conduct heat extremely well and the elevation away from contact will slow down the cooking process for a more even cook.
  • Cook the brie wheels for approximately 20 minutes (until gooey).
  • This dish can easily be prepared hours in advance or even the night before which makes it ideal for dinner parties, family gatherings and the like.
