This week we're off to Cyprus for the next leg of our #aroundtheworldin80bbqs journey.
We've adapted a Cypriot favorite using one of our favourite BBQ rubs - the Peppery rub from Spicentice.
This easy dish working brilliantly as a side, in a salad or even instead of a patty as a vegetarian burger.
Full of flavour and so easy.
MAIN INGREDIENTS

EQUIPMENT You can create this dish using any Weber BBQ; charcoal or gas. We've used the following:

IN THE KITCHEN
- Slice halloumi into pieces of even size and thickness
- Drizzle with an oil of your choosing with a high smoke point - we've used rapeseed oil.
- Coat in a rub or spice mix of your choice, we recommend the peppery rub from spicentice which was delicious.
AT THE BBQ
- Set up your Weber BBQ for direct grilling at a medium heat.
- Using Weber's non-stick spray give the bbq grates a good coating; this will ensure that you still achieve excellent searing but helps prevent food from sticking the cooking grates and falling apart when flipped.
- Add the halloumi slices and close the lid for 1-2 minutes.
- Turn over and cooking for a further minutes or do - until cooked to your liking.
ON THE PLATE
This is such a versatile little dish that can be easily adapted for a myriad of meals, here are some ideas:
- Slice into strips and serve with a dip.
- Serve simply as a side dish at your next backyard BBQ get together.
- Roughly chop and work into a salad
- Use instead of a burger patty in a bun, great as a vegetarian alternative.
