Pork Chops can very often be a bit of a BBQ let down, bland and overcooked. But with the right marinade and your trusty Weber grill, you can transform this cut into something very special; for best results you want to use scorching hot cast iron cooking grates like the ones you'll find on a Weber Genesis E-330 or E-310.

This week for Around the World in 80 BBQs we're bringing a Puerto Rican flavour to the BBQ classic that is the grilled pork chop. Puerto Rican cuisine has been influenced by an array of cultures including the Taino Arawak, Spanish, African and their current colonizers, The United States. The key ingredients in this dish besides the pork are Oregano, Garlic and Sage.

Puerto Rican Grilled Pork Chops


  • 4 Large Pork Chops
  • Rapeseed Oil, splash
  • Coarse Salt, 2 tsp
  • Dried Oregano, 2 tsp
  • Garlic Granules, 2 tsp
  • Ground Black Pepper, 1 tsp
  • Dried Sage, 1 tsp


You can create this dish using any Weber BBQ; charcoal or gas.

We've used the following:

  • Weber Genesis E-330
  • Tongs
  • Large Drip Trays
  • GBS Sear Grate (8834)


  • Coat the chops with a little oil, rub the meat with your fingertips to coat evenly.
  • Combine the dry ingredients in a bowl to form your rub.
  • Sprinkle a generous quantity your rub onto your pork chops.
  • Massage into the chops for even coating on both sides.
  • Leave to rest/cure in the fridge for 30 minutes.


  • Set up your Weber BBQ for direct grilling at a very high heat.
    Cast Iron cooking grates are recommended for this dish as they will provide fantastic looking char lines on the meat.
  • Sear each pork chop for 2-4 minutes on each side until cooked.
