For our Around the World in 80 BBQs journey we like to experiment with both complex and simple dishes to help you make the most out of your Weber BBQ.

The winning formula for us however is to find a dish that both simple to create and very rewarding to eat. This week, we think we've cracked it.

Fat juicy prawns, an electric orange dry marinade of less than five ingredients, simply grilled using a cast iron griddle for even searing and colour. Serve simply with a squeeze of fresh lime juice.

We recommend you enjoy this as a starter with a crisp asian beer.

Malaysian Grilled Turmeric Prawns

MAIN INGREDIENTS

  • Prawns
  • Turmeric, ground - heaped tablespoon
  • Ginger, ground - heaped teaspoon
  • Salt, pinch
  • Pepper, pinch
  • Rapeseed Oil, splash

TO SERVE:

  • Fresh Limes, Wedges for squeezing

EQUIPMENT

You can create this dish using any GBS compatible Weber BBQ; charcoal or gas.

We've used the following:

  • Weber Genesis
  • Weber Briquettes
  • Tongs
  • Weber Gourmet BBQ System Griddle

IN THE KITCHEN

  • In a large bowl, mix your dry ingrediants - tumeric, ginger, salt & pepper.
  • Add your prawns, mix well to ensure even coating.
    You could consider using any shellfish you like for this recipe, including whole prawns with shells.
  • Set aside to marinade for at least 60 minutes.

AT THE BBQ

  • Set up your Weber BBQ for direct grilling at a very high heat.
  • Add your griddle to the GBS system and wait 5-10 mins for the cast iron to sufficiently heat up.
    It should be scorching hot!
  • Add your prawns and keep turning using your trusty bbq tongs for even searing of the flesh.
  • Be careful not to overcook - this dish is cooked in a matter of minutes which makes it an ideal starter.
  • Serve in the griddle for a real wow factor with a fistful of lime wedges for squeezing.
